Winemakers notes ~ Our reserve program is where our winemaker gets to shine! These wines are hand-crafted. Greg might do additional cluster sorting prior to crush or leaving the juice on the lees longer to achieve a more intense and flavorful wine. The Cabernet is fermented with a Bordeaux yeast suited for this Rhone varietal. Our Reserve Cabernet is aged longer then the Cabernet’s in our diamond label program, in this case Greg aged them in neutral French oak for 29 months. Then we moved it to new American oak for one year. Once the wine is bottled it is laid down to rest for an additional 12 months prior to releasing it to our wine club.
Tasting notes ~ Our Cabernet Sauvignon is best described as a dry, full-bodied red wine with flavors of dark cherries and cassis. This wine has dry finish with a pleasant aftertaste. Best served at room temperature. We recommend serving our Cabernet Sauvignon with steak, lamb, sharp cheddar and chocolate. Herbs, such as nutmeg, clove, thyme, and garlic compliment this wine.
