Winemakers notes ~ We aged this wine in neutral French oak barrels for 24 months with the intentions of not over powering the fruit notes with tannins. Then we moved it to new American oak for additional 12 months to add a little structure and spice.
Tasting notes ~ Our Cabernet is fruity and smooth with just enough tannins for structure. There is a burst of dark cherry and sweet earthiness on the front with hints of plum and vanilla on the finish. We recommend serving our Cabernet with hearty steak, roast lamb, blue cheese and dark chocolate. Herbs, such as black pepper and garlic complement this wine.
